  • 2 cups All-purpose flour
  • 0.75 cup Unsweetened cocoa powder

  • 1.5 teaspoons Baking soda
  • 1 teaspoon Salt
  • 1 cup Mashed potatoes (plain, no butter or milk)
  • 0.5 cup Unsalted butter, softened
  • 1.5 cups Granulated sugar
  • 3 large Eggs
  • 2 teaspoons Pure vanilla extract
  • 1 cup Whole milk
  • 1 cup Semi-sweet chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottoms with parchment paper for easy removal.

Step 2

In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, cream the mashed potatoes and unsalted butter together until smooth and fluffy, about 2-3 minutes using an electric mixer on medium speed.

Add the granulated sugar to the potato mixture and continue to beat until well combined and fluffy, another 2 minutes.
