Ingredients

  • 3 medium Russet potatoes
  • 2 medium Carrots
  • 1 large Zucchini
  • 1 small Yellow onion
  • 3 tablespoons All-purpose flour
  • 1 large Egg
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Parsley, chopped
  • 0.25 cup Vegetable oil

Directions

Step 1

Peel and grate the potatoes using a box grater. Place the grated potatoes in a clean kitchen towel and squeeze out the excess moisture.

Step 2

Peel and grate the carrots. Grate the zucchini and place it in a second towel to squeeze out moisture. Finely chop the onion.

Step 3

In a large mixing bowl, combine the grated potatoes, carrots, zucchini, and chopped onion.

Step 4

Add the all-purpose flour, egg, garlic powder, salt, black pepper, and chopped parsley. Mix well until the ingredients are evenly combined and hold together.

Step 5

Heat the vegetable oil in a large skillet over medium heat.

Scoop about 2-3 tablespoons of the mixture and form it into a small patty. Carefully place the patties into the hot oil, making sure not to overcrowd the pan.
