Slice the potatoes, carrots, and zucchini into thin rounds (about 1/4 inch thick) and cut the red bell pepper into thin strips.
Spread the potato slices evenly in the baking dish, followed by a layer of carrots, zucchini, red bell peppers, and broccoli florets.
