Ingredients

  • 2 cans canned tuna (in water, drained)
  • 1 medium zucchini (grated)
  • 1 medium carrot (grated)
  • 0.5 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 0.5 cup panko breadcrumbs
  • 1 large egg
  • 2 tablespoons parsley (finely chopped)
  • 1 tablespoon lemon juice (freshly squeezed)
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon salt
  • 2 tablespoons olive oil (for cooking)
  • 4 pieces burger buns
  • 4 pieces lettuce leaves
  • 4 slices tomato slices
  • 0 to taste condiments (optional: mayonnaise, mustard, ketchup)

Directions

Step 1

Drain the canned tuna thoroughly and place it into a large mixing bowl.

Step 2

Add grated zucchini, grated carrot, chopped onion, minced garlic, panko breadcrumbs, egg, finely chopped parsley, lemon juice, ground black pepper, and salt to the bowl.

Mix all the ingredients together until well combined. The mixture should be moist but hold together when pressed. If needed, add a bit more panko breadcrumbs to adjust the consistency.
