Ingredients

  • 3 tablespoons Olive oil
  • 2 large Yellow onion
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 4 pieces Veggie burger patties
  • 8 slices Sharp cheddar cheese
  • 8 slices Rye bread or sandwich bread
  • 4 tablespoons Butter
  • 2 tablespoons Dijon mustard

Directions

Step 1

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 2

Slice the yellow onions thinly and add them to the skillet. Stir to coat them in the oil.

Step 3

Sprinkle the onions with 1/2 teaspoon of salt and cook, stirring occasionally, until deeply caramelized and golden brown. This will take about 15-20 minutes. Remove from skillet and set aside.

Step 4

In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat.

Cook the veggie burger patties according to package instructions, typically 3-4 minutes per side, until heated through and slightly crispy. Set aside.
