  • 16 oz Refrigerated biscuit dough
  • 4 tbsp Butter, melted
  • 0.5 cup Parmesan cheese, grated
  • 1 cup Cheddar cheese, shredded
  • 1 medium Zucchini, diced small
  • 1 medium Red bell pepper, diced small
  • 1 medium Carrot, grated
  • 1 cup Spinach, chopped
  • 2 cloves Garlic, minced
  • 1 tsp Italian seasoning
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 tbsp Olive oil
  • 1 as needed Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Spray a bundt pan or a 9x13 baking dish with cooking spray and set it aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the zucchini, red bell pepper, carrot, and garlic. Sauté for 5-7 minutes, or until the vegetables soften. Mix in the chopped spinach and cook for an additional 2 minutes until wilted. Remove from heat and allow to cool slightly.
