  • 2 sliced scallions
  • 0.5 cup, grated parmesan cheese

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Set aside.

Heat the olive oil in a 10-inch oven-safe non-stick skillet over medium heat.

Step 4

Add the diced red bell pepper, zucchini, and sliced mushrooms to the skillet. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are slightly softened.
