  • 2 cups, chopped Baby spinach
  • 1 cup, finely chopped Mushrooms
  • 1.5 cups Rolled oats
  • 1 15-ounce can Canned black beans (drained and rinsed)
  • 2 Eggs
  • 0.5 cup Breadcrumbs
  • 2 tablespoons Soy sauce
  • 1 teaspoon Dried Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups, halved Cherry tomatoes
  • 0.5 cup, chopped Fresh basil leaves
  • 0.25 cup, grated Parmesan cheese
  • 1 tablespoon Lemon juice

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a loaf pan with nonstick spray or olive oil.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until translucent.

Step 3

Stir in the minced garlic, grated carrot, and grated zucchini. Cook for 3-4 more minutes, then add the chopped spinach and mushrooms. Sauté until the spinach is wilted and the mushrooms are softened. Remove from heat and let cool slightly.
