Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 medium carrot, finely diced
  • 1 celery stalk, finely diced
  • 1 medium red bell pepper, diced
  • 1 medium zucchini, diced
  • 28 ounces canned crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon sugar (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 2 tablespoons fresh parsley or basil (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large saucepan or skillet over medium heat.

Step 2

Add the diced onions and cook until softened, about 3-4 minutes.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the finely diced carrot, celery, red bell pepper, and zucchini to the pan. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.

Step 5

Stir in the crushed tomatoes, tomato paste, dried oregano, and dried basil. Mix well to combine.

Step 6

Lower the heat to a simmer and add the sugar (if using), salt, and black pepper. Stir to incorporate.

Step 7

Cover the saucepan and let the sauce simmer gently for 20 minutes, stirring occasionally, to allow the flavors to meld together and the vegetables to tenderize completely.

Step 8

Taste test and adjust the seasoning as needed with additional salt or pepper.

Step 9

Serve the sauce over your favorite pasta, as a pizza base, or alongside breadsticks. Garnish with freshly chopped parsley or basil, if desired.
