  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 medium zucchini, diced
  • 2 medium bell peppers, diced
  • 1 large carrot, grated
  • 2 cups broccoli florets, chopped
  • 3 cups baby spinach
  • 2 cups cooked quinoa
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 0.5 cup grated parmesan cheese
  • 0.5 cup breadcrumbs
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with a little olive oil and set aside.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the diced onion and garlic, and sauté for 2-3 minutes until softened and fragrant.

Step 3

Add the zucchini, bell peppers, grated carrot, and chopped broccoli to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are slightly softened.

Stir in the baby spinach and cook for 1-2 minutes until wilted. Season the vegetable mixture with dried oregano, dried basil, salt, and black pepper.
