Ingredients

  • 1 cup canned chickpeas (rinsed and drained)
  • 1 cup cooked quinoa
  • 0.5 cup breadcrumbs
  • 0.25 cup red onion (finely diced)
  • 2 tablespoons fresh parsley (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil
  • 0.5 cup plain Greek yogurt
  • 0.25 cup cucumber (grated and squeezed to remove excess water)
  • 1 tablespoon lemon juice
  • 0.5 teaspoon dried dill
  • 4 pita bread
  • 1 cup lettuce (shredded)
  • 1 tomato (sliced)
  • 0.25 cup red onion (thinly sliced for topping)

Directions

Step 1

In a large mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth but with some texture remaining.

Step 2

Add the cooked quinoa, breadcrumbs, finely diced red onion, parsley, minced garlic, cumin, coriander, smoked paprika, salt, and black pepper. Mix thoroughly until the mixture holds together when pressed.

Step 3

Divide the mixture into 4 equal portions and shape each into burger patties about 1/2-inch thick.

Step 4

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat. Cook the patties for 4-5 minutes on each side, or until golden brown and heated through. Remove from the skillet and set aside.

Step 5

In a small bowl, prepare the tzatziki sauce by combining the Greek yogurt, grated cucumber, lemon juice, and dried dill. Mix well and refrigerate until ready to use.

Step 6

Warm the pita bread on a dry skillet or in the oven for a few minutes until pliable.

Step 7

Assemble the veggie gyro burgers: spread a generous amount of tzatziki sauce onto each pita, add a veggie patty, then top with shredded lettuce, tomato slices, and thinly sliced red onion.

Step 8

Fold the pita bread around the filling and serve immediately. Enjoy!
