Ingredients

  • 2 pieces Sourdough bread slices
  • 2 tablespoons Butter
  • 1 cup Shredded cheddar cheese
  • 1 cup Shredded mozzarella cheese
  • 0.5 medium, thinly sliced Red bell pepper
  • 0.25 medium, thinly sliced Zucchini
  • 0.5 cup Spinach leaves
  • 0.25 small, thinly sliced Red onion
  • 1 teaspoon Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat a skillet over medium heat and add the olive oil.

Sauté the sliced red bell pepper, zucchini, and red onion for 2-3 minutes until softened. Season with salt and black pepper. Remove from heat and set aside.

Spread 1 tablespoon of butter evenly on one side of each slice of sourdough bread.

Step 4

Place one slice of bread, buttered side down, onto a clean surface or cutting board. Sprinkle half of the shredded cheddar and mozzarella cheese evenly on top.
