Ingredients

  • 1 cup Carrot, shredded
  • 1 cup Zucchini, shredded
  • 1 cup Cooked quinoa
  • 1.5 cups Chickpeas, rinsed and mashed
  • 0.25 cup Flaxseed meal
  • 0.5 cup Oats
  • 1 teaspoon Garlic powder
  • 1 teaspoon Cumin powder
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 0.25 cup Bread crumbs (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) or heat a large skillet over medium heat if pan-frying.

Step 2

Place the shredded carrot and zucchini in a clean kitchen towel or cheesecloth, and wring out the excess moisture.

Step 3

In a large mixing bowl, combine the shredded carrot, zucchini, cooked quinoa, and mashed chickpeas. Mix well.

Step 4

Add in the flaxseed meal, oats, garlic powder, cumin powder, paprika, salt, and black pepper. Mix until fully combined.

Step 5

If the mixture feels too wet, add the optional bread crumbs, one tablespoon at a time, until the texture is moldable.

Using your hands, form the mixture into 6 equally-sized patties.
