Ingredients

  • 4 pieces Flour tortillas
  • 1 cup Shredded cheddar cheese
  • 1 medium Red bell pepper, diced
  • 1 medium Yellow bell pepper, diced
  • 1 small Zucchini, finely diced
  • 0.5 medium Red onion, finely diced
  • 0.5 cup Corn kernels (fresh, canned, or frozen)
  • 0.5 cup Black beans, rinsed and drained
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped
  • 0 as needed Sour cream or guacamole (optional)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Add the diced red and yellow bell peppers, zucchini, red onion, and corn. Sauté for 3-4 minutes until the vegetables begin to soften.

Stir in the black beans, ground cumin, chili powder, salt, and black pepper. Cook for another 2 minutes, stirring occasionally. Remove from heat and stir in the chopped cilantro.

Heat a second skillet or griddle over medium heat and lightly grease with the remaining tablespoon of olive oil.

Place one flour tortilla in the skillet. Sprinkle 1/4 cup of shredded cheddar cheese evenly over half of the tortilla.
