Ingredients

  • 8 slices Whole wheat sandwich bread slices
  • 0.5 cups Hummus
  • 4 leaves Lettuce leaves
  • 1 medium, sliced Tomato
  • 0.5 sliced Cucumber
  • 1 medium, sliced Avocado
  • 4 slices Cheddar cheese slices
  • 0.5 thinly sliced Red onion
  • 1 tablespoon Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

1. Preheat a griddle or skillet over medium heat.

Step 2

2. Lightly brush one side of each bread slice with olive oil.

3. Place the bread slices, oil side down, on the griddle. Toast for about 2-3 minutes until golden brown on one side. Remove from heat and set aside.

4. Spread a generous layer of hummus on the un-toasted side of four bread slices.
