Ingredients

  • 2 pieces Boneless, skinless chicken breast
  • 4 tablespoons Olive oil
  • 3 cloves Garlic cloves, minced
  • 2 cups Broccoli florets
  • 1 large Bell pepper, sliced (red, yellow, or orange)
  • 1 medium Zucchini, sliced into half moons
  • 1 cup Cherry tomatoes, halved
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Fresh basil, chopped
  • 3 tablespoons Lemon juice
  • 1 teaspoon Lemon zest

Directions

Step 1

Slice the chicken breasts into thin strips and season them with 0.5 teaspoons of salt and 0.25 teaspoons of black pepper.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken strips and cook for 4-5 minutes on each side until golden and fully cooked. Remove the chicken from the skillet and set aside.
