  • 1 tablespoon lime juice
  • 4 large flour tortillas
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 0.5 cup sour cream (optional)
  • 0.5 cup salsa (optional)

Directions

Step 1

Heat olive oil in a large skillet over medium heat.

Step 2

Add the diced onion and bell peppers to the skillet and sauté for 5-6 minutes, until softened.
