Ingredients

  • 1 piece Pre-made pie crust
  • 1 tablespoon Olive oil
  • 1 medium Onion, finely chopped

  • 1 medium Red bell pepper, diced
  • 2 cups Spinach, fresh and chopped
  • 6 slices Veggie bacon, diced
  • 4 large Eggs
  • 1 cup Milk
  • 0.5 cup Heavy cream
  • 1 cup Cheddar cheese, shredded
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Unroll the pre-made pie crust and press it into a 9-inch pie dish. Trim the edges if necessary. Pre-bake the crust for 10 minutes, then set it aside to cool.

Step 3

Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook for 2-3 minutes until it begins to soften.

Add the minced garlic and diced red bell pepper to the skillet. Cook for another 3-4 minutes until the vegetables are tender.
