Ingredients

  • 1 cup (packed) Fresh cilantro
  • 1 cup (packed) Fresh parsley
  • 0.5 cup (packed) Fresh mint leaves
  • 0.5 cup Greek yogurt
  • 2 whole Garlic cloves
  • 2 tablespoons Lemon juice
  • 3 tablespoons Olive oil
  • 0.5 whole Jalapeño (optional, for extra zest)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Water (if needed for consistency)

Directions

Step 1

Wash the cilantro, parsley, and mint thoroughly to remove any dirt or grit. Pat them dry with a clean kitchen towel or paper towel.

Step 2

Peel the garlic cloves and set them aside.

Step 3

If using jalapeño, remove the seeds for a milder flavor or keep them for extra spice. Roughly chop the jalapeño into smaller pieces for easier blending.

Step 4

In a blender or food processor, combine the cilantro, parsley, mint, Greek yogurt, garlic cloves, lemon juice, olive oil, jalapeño (if using), salt, and black pepper.

Step 5

Blend everything on high speed until the sauce is smooth. If the mixture is too thick, add 1-2 tablespoons of water to reach your desired consistency.

Step 6

Taste the sauce and adjust seasoning by adding more salt, pepper, or lemon juice as needed.

Step 7

Transfer the sauce to a serving bowl or airtight container. Serve immediately or refrigerate for up to 3 days.
