  • 2 celery stalks
  • 4 garlic cloves
  • 2 tablespoons tomato paste
  • 1 14-ounce can diced tomatoes
  • 1.5 cups dry green or brown lentils
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon black pepper
  • 1 teaspoon salt
  • 3 cups kale or spinach
  • 1 tablespoon lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Dice the onion, carrots, and celery into small pieces. Mince the garlic cloves.

Step 3

Add the onion, carrots, and celery to the pot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.

Stir in the minced garlic and tomato paste. Cook for 1-2 minutes until fragrant.
