Ingredients

  • 3 cups Cooked jasmine rice (preferably day-old)
  • 1 cup Carrots, diced
  • 1 cup Frozen green peas, thawed
  • 1 cup Red bell pepper, diced
  • 1 small Yellow onion, finely chopped
  • 3 cloves Garlic, minced
  • 3 stalks Scallions, thinly sliced
  • 3 tablespoons Soy sauce (low sodium)
  • 1 tablespoon Sesame oil
  • 2 tablespoons Vegetable oil (for stir-frying)
  • 2 large Eggs, beaten
  • 0.5 teaspoon Ground black pepper
  • 0 teaspoons Salt (optional, to taste)

Directions

Step 1

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.

Step 2

Add the beaten eggs and scramble them until just cooked. Remove the scrambled eggs from the wok and set aside.

Step 3

In the same wok, add the remaining 1 tablespoon of vegetable oil and heat over medium-high heat.

Step 4

Add the diced onion and minced garlic. Cook for 1-2 minutes until fragrant.

Step 5

Stir in the carrots, red bell pepper, and frozen peas. Cook for 4-5 minutes, stirring occasionally, until the vegetables are tender but still crisp.
