  • 0.5 teaspoon Black pepper
  • 0.5 cup Fresh parsley (finely chopped)
  • 0.33 cup Fresh scallions (finely chopped)
  • 1 medium Lemon (juiced)
  • 8 pieces Lettuce leaves (for serving)

Directions

Step 1

Rinse the red lentils thoroughly under cold water, then transfer them to a medium-sized pot with 2.5 cups of water.

Bring the water to a boil over medium-high heat, then reduce the heat to low and simmer for 10-12 minutes, stirring occasionally, until the lentils are soft and the water is mostly absorbed.
