Ingredients

  • 300 grams Water spinach (kangkung)
  • 3 pieces Shallots
  • 3 pieces Garlic cloves
  • 2 pieces Red chili peppers (optional)
  • 150 grams Firm tofu
  • 2 tablespoons Sweet soy sauce (kecap manis)
  • 1 tablespoon Soy sauce
  • 2 tablespoons Vegetable oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon White pepper (optional)

Directions

Step 1

Wash the water spinach thoroughly and discard any tough stems. Cut into 3-4 inch lengths and set aside.

Step 2

Slice the shallots and garlic thinly. If using chili peppers, slice them diagonally.

Step 3

Cut the firm tofu into small cubes.

Step 4

Heat 2 tablespoons of vegetable oil in a large wok or skillet over medium heat.

Step 5

Fry the tofu cubes until golden and crisp on all sides. Remove the tofu and set aside.

In the same wok, sauté the sliced shallots, garlic, and chili peppers (if using) until fragrant, about 1-2 minutes.
