Ingredients

  • 2 medium Zucchini
  • 2 large Red bell peppers
  • 250 grams Button mushrooms
  • 2 medium Red onions
  • 200 grams Cherry tomatoes
  • 4 tablespoons Olive oil
  • 3 tablespoons Lemon juice
  • 2 tablespoons Soy sauce
  • 3 minced Garlic cloves
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons, chopped Fresh parsley
  • 8 pieces Wooden or metal skewers

Directions

Step 1

Start by soaking wooden skewers in water for at least 30 minutes to prevent burning. Skip this step if using metal skewers.

Step 2

Wash and prepare the vegetables: cut zucchini and red bell peppers into 1-inch chunks, slice red onions into quarters (separating the layers), and leave the cherry tomatoes and mushrooms whole.

Step 3

In a large mixing bowl, prepare the marinade by whisking together olive oil, lemon juice, soy sauce, minced garlic, smoked paprika, ground cumin, dried oregano, salt, and black pepper.

Step 4

Add the prepared vegetables to the marinade. Toss well to coat each piece thoroughly. Cover the bowl and let the vegetables marinate for at least 20 minutes (or up to 2 hours for deeper flavor) in the refrigerator.

Step 5

Preheat your grill or grill pan to medium-high heat.

Step 6

Thread the marinated vegetables onto the skewers, alternating between zucchini, bell peppers, mushrooms, red onion, and cherry tomatoes, to create a colorful pattern.

Step 7

Place the skewers on the grill and cook for about 12-15 minutes, turning occasionally, until the vegetables are tender and lightly charred.

Step 8

Remove from the grill and sprinkle with freshly chopped parsley before serving.

Step 9

Serve the vegetarian shashlik with a side of flatbread, rice, or your favorite dipping sauce. Enjoy!
