Ingredients

  • 450 g All-purpose flour
  • 200 ml Water
  • 1 tsp Salt
  • 2 medium (finely chopped) Yellow onion
  • 2 medium (grated) Carrots
  • 2 medium (diced into small cubes) Potatoes
  • 100 g (chopped) Spinach or Swiss chard
  • 2 tbsp Sunflower oil
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 0.5 tsp Black pepper
  • 1 tsp Vegetable bouillon powder
  • 2 tbsp (finely chopped) Fresh dill or parsley

Directions

Step 1

In a large bowl, combine the flour and salt. Gradually add water while mixing to form a firm, smooth dough. Knead for 8-10 minutes, cover with a damp cloth, and let rest for 30 minutes.

Step 2

Meanwhile, prepare the filling. Heat 1 tablespoon of sunflower oil in a skillet over medium heat. Add chopped onions and sauté until softened, about 3-5 minutes.

Step 3

Add grated carrots and diced potatoes to the skillet. Cook for an additional 5 minutes, stirring occasionally.

Step 4

Remove the skillet from heat. Add the chopped spinach (or Swiss chard), ground cumin, ground coriander, black pepper, vegetable bouillon powder, and fresh dill or parsley. Mix well and set the filling aside to cool.

Divide the dough into 4 equal portions. Roll out one portion into a thin sheet (approximately 2 mm thick) on a lightly floured surface.

Cut the sheet into 10x10 cm squares. Place 1-2 teaspoons of the vegetable filling in the center of each square.

Fold each square into a dumpling by pinching opposite corners together in the center to form a packet, ensuring the edges are well-sealed.

Repeat the rolling, cutting, and filling process with the remaining dough and filling.

Step 9

Grease the tiers of a steamer with sunflower oil to prevent sticking. Arrange the manty on the steamer tiers, leaving a bit of space between them.

Step 10

In a large pot, bring water to a boil. Place the steamer tiers over the pot, cover with a lid, and steam the manty for 35-40 minutes.

Step 11

Carefully remove the manty from the steamer and serve immediately. They can be enjoyed on their own or with a side of yogurt or tomato-based dipping sauce.
