Ingredients

  • 2 medium-sized, julienned Carrot
  • 200 grams, thinly sliced Cabbage
  • 100 grams, rinsed Bean sprouts
  • 3 cloves, minced Garlic
  • 2 small, finely chopped Shallot
  • 2 tablespoons Soy sauce
  • 0.5 teaspoons Salt
  • 0.25 teaspoons White pepper
  • 15 pieces Spring roll wrappers
  • 2 tablespoons All-purpose flour
  • 2 tablespoons Water
  • 500 milliliters, for frying Cooking oil

Directions

Step 1

Prepare the filling: Heat 1 tablespoon of cooking oil in a wok or large skillet over medium heat.

Step 2

Sauté the minced garlic and shallots until fragrant, about 1-2 minutes.

Step 3

Add the julienned carrots and sliced cabbage, stirring frequently for 3-4 minutes until slightly tender.

Stir in the bean sprouts, soy sauce, salt, and white pepper. Cook for another 2 minutes, then remove from heat. Let the filling cool to room temperature.

Prepare the spring roll adhesive: In a small bowl, mix the all-purpose flour and water into a smooth paste. This will be used to seal the rolls.

Assemble the loempia: Lay a spring roll wrapper flat on a clean surface with one corner facing you (creating a diamond orientation). Place 2-3 tablespoons of the vegetable filling near the corner closest to you.

Fold the bottom corner of the wrapper over the filling, then fold in the two side corners to create an envelope shape. Roll the wrapper tightly away from you, sealing the top corner with a small dab of the flour paste.
