Ingredients

  • 4 large flour tortillas
  • 1 cup black beans, drained and rinsed
  • 1 cup sweet corn kernels, drained
  • 1 red bell pepper, diced
  • 1 jalapeño, finely chopped (optional)
  • 1 cup shredded cheddar cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 tablespoons fresh cilantro, chopped
  • 0.25 cup sour cream
  • 0.25 cup salsa
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the diced red bell pepper and jalapeño (if using) to the skillet. Sauté for 3-4 minutes or until softened.

Step 3

Stir in the black beans, corn, ground cumin, chili powder, salt, and black pepper. Cook for 2-3 minutes to warm the mixture through and allow the flavors to meld.

Step 4

Remove the skillet from heat. Stir in the chopped cilantro and set the mixture aside to cool slightly.

Step 5

In a small bowl, mix the sour cream and salsa to create a creamy Tex-Mex sauce.

Step 6

Lay each tortilla flat on a clean surface. Spread 1 tablespoon of the Tex-Mex sauce onto each tortilla, leaving about 1 inch of space around the edges.

Step 7

Spoon an even amount of the bean-corn mixture onto the center of each tortilla. Sprinkle shredded cheddar cheese on top.

Step 8

Roll each tortilla tightly, tucking in the sides as you go, to form a compact roll.

Step 9

Place the rolls seam-side down on a preheated griddle or skillet over medium heat. Cook for 2-3 minutes on each side until golden brown and the cheese is melted.

Step 10

Remove the rolls from the skillet and let them cool slightly. Slice each roll into halves or thirds for serving.
