  • 1 medium Yellow onion, diced
  • 3 Garlic cloves, minced
  • 1 medium Zucchini, diced
  • 1 medium Red bell pepper, diced
  • 1 cup Corn kernels (fresh or frozen)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 1 cup Black beans (cooked and drained)
  • 0.5 cup Grated Monterey Jack or queso fresco (optional)

Directions

Step 1

1. Soak the dried corn husks in warm water for at least 30 minutes, or until they are soft and pliable. Drain and set aside.

2. In a mixing bowl, combine masa harina, baking powder, and salt. Gradually pour in the vegetable broth, mixing until the dough comes together.

3. In a separate bowl, whip the vegetable shortening or butter using a hand mixer until light and fluffy, about 2–3 minutes. Add the whipped shortening to the masa dough and mix until smooth. The masa should have a spreadable consistency. If it feels too dry, add a bit more broth, one tablespoon at a time.

4. To prepare the filling, heat olive oil in a skillet over medium heat. Add the diced onion and sauté for 3–4 minutes, until softened. Stir in the minced garlic and cook for 1 more minute.
