In a mixing bowl, crack the eggs and beat them gently until the yolks and whites are combined but not overly frothy.
Add the vegetarian dashi stock, soy sauce, and sugar to the eggs. Mix well until the sugar completely dissolves.
Preheat a tamagoyaki pan (or a small, square/rectangular nonstick frying pan) over medium-low heat. Lightly grease it with vegetable oil using a folded paper towel to ensure an even coating.
