  • 2 cups vegetable broth
  • 0.5 cup dried apricots, chopped
  • 0.25 cup slivered almonds (for garnish)
  • 2 tablespoons fresh cilantro, chopped (for garnish)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup couscous or crusty bread (for serving)

Directions

Step 1

Heat the olive oil in a large heavy-bottomed pot, such as a Dutch oven, over medium heat.
