  • 1 15-ounce can black beans, drained and rinsed
  • 1 cup frozen corn
  • 2 tablespoons taco seasoning
  • 1 10-ounce can diced tomatoes with green chilies
  • 2 cups shredded cheddar cheese
  • 0.5 cup sour cream
  • 2 tablespoons cilantro, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish or oven-safe skillet.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the diced onion and red bell pepper. Cook for 3-4 minutes until softened.

Stir in the minced garlic and cook for an additional 1 minute until fragrant.
