Preheat your oven to 375°F (190°C).
Bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to the package instructions until al dente. Drain and set aside.
In a large skillet over medium heat, add the olive oil. Sauté the garlic for about 1 minute until fragrant, then add the chopped spinach. Cook for 3-4 minutes, stirring occasionally, until the spinach wilts. Remove from heat and let cool slightly.
In a large mixing bowl, combine ricotta cheese, 1 cup of shredded mozzarella cheese, grated Parmesan cheese, cooked spinach mixture, egg, Italian seasoning, salt, and pepper. Mix until fully combined.
Spread 1 cup of marinara sauce evenly across the bottom of a 9x13 inch baking dish.
