Ingredients

  • 20 pieces Cherry peppers
  • 1 cup Breadcrumbs
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup Ricotta cheese
  • 2 cloves Garlic, minced
  • 2 tablespoons Fresh parsley, finely chopped
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Mozzarella cheese, shredded
  • 5 pieces Fresh basil leaves, for garnish

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

Carefully cut off the tops of the cherry peppers and remove all seeds and membranes without breaking the peppers. Rinse and set aside.

Step 3

In a medium mixing bowl, combine the breadcrumbs, grated Parmesan cheese, ricotta cheese, minced garlic, chopped parsley, olive oil, salt, and black pepper until well mixed to form the filling.

Spoon the filling into each cherry pepper, pressing gently to ensure it is tightly packed but not overflowing.
