Ingredients

  • 200 grams Plant-based chicken strips
  • 200 grams Rice noodles
  • 1 large (julienned) Carrot
  • 1 small (sliced) Red bell pepper
  • 1 cup Broccoli florets
  • 1 cup Snow peas
  • 3 stalks (sliced) Green onions
  • 3 cloves (minced) Garlic
  • 1 teaspoon (grated) Ginger
  • 3 tablespoons Soy sauce
  • 2 tablespoons Hoisin sauce
  • 1 tablespoon Sesame oil
  • 2 tablespoons Vegetable oil
  • 0.5 teaspoons (optional) Chili flakes
  • 1 tablespoon (for garnish) Sesame seeds

Directions

Step 1

Cook the rice noodles according to the package instructions. Drain, rinse with cold water, and set aside.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Step 3

Add the plant-based chicken strips and stir-fry for 3-4 minutes until lightly browned. Remove from the skillet and set aside.

Step 4

In the same skillet, add another tablespoon of vegetable oil. Toss in the minced garlic and grated ginger and stir-fry for about 30 seconds until fragrant.

Step 5

Add the julienned carrots, sliced red bell pepper, broccoli florets, and snow peas to the skillet. Stir-fry for 5-6 minutes until the vegetables are tender but still crisp.

Step 6

Return the plant-based chicken strips to the skillet. Stir in the cooked rice noodles.
