Ingredients

  • 250 grams Dried soba noodles
  • 2 tablespoons Sesame oil
  • 3 Garlic cloves, minced
  • 1 tablespoon Ginger, minced
  • 1 large Carrot, julienned
  • 1 Bell pepper, thinly sliced
  • 1.5 cups Broccoli florets
  • 1 cup Snow peas
  • 2 Green onions, sliced
  • 4 tablespoons Soy sauce (low sodium)
  • 2 tablespoons Oyster sauce (vegetarian)
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Brown sugar
  • 1 tablespoon Toasted sesame seeds
  • 0.5 teaspoon Chili flakes (optional)

Directions

Step 1

Cook the soba noodles according to package instructions until al dente. Drain, rinse with cold water, and set aside.

Step 2

In a small bowl, whisk together the soy sauce, vegetarian oyster sauce, rice vinegar, and brown sugar. Set the sauce aside.

Step 3

Heat a wok or large skillet over medium-high heat and add 1 tablespoon of sesame oil.
