Ingredients

  • 200 grams Dry rice noodles
  • 2 tablespoons Sesame oil
  • 3 pieces Garlic cloves, minced
  • 1 teaspoon Ginger, grated
  • 1 large Carrot, julienned
  • 1 medium Red bell pepper, thinly sliced
  • 1 medium Zucchini, julienned
  • 1 cup Broccoli florets
  • 3 tablespoons Soy sauce (reduced sodium)
  • 2 tablespoons Hoisin sauce
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Brown sugar
  • 2 stalks Green onions, chopped
  • 1 tablespoon Sesame seeds
  • 0.5 teaspoons Red chili flakes (optional)

Directions

Step 1

Bring a large pot of water to a boil. Cook the rice noodles according to the package instructions. Drain, rinse with cold water, and set aside.

Step 2

In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and brown sugar. Set aside.

Step 3

Heat a wok or large skillet over medium-high heat and add the sesame oil.

Once the oil is hot, add the minced garlic and grated ginger. Stir-fry for 30 seconds or until fragrant.
