Ingredients

  • 8 oz chow mein noodles (or other stir-fry noodles)

  • 1 small zucchini, julienned
  • 1 cup mushrooms, sliced
  • 1 cup snap peas
  • 2 stalks green onions, chopped
  • 3 tbsp soy sauce (use gluten-free if needed)
  • 2 tbsp hoisin sauce (optional)
  • 1 tbsp rice vinegar
  • 1 tsp brown sugar
  • 1 tsp cornstarch
  • 2 tbsp water
  • 1 tbsp toasted sesame seeds (optional, for garnish)

Directions

Step 1

Cook the noodles according to the package instructions. Drain and set aside.

In a small bowl, mix the soy sauce, hoisin sauce (if using), rice vinegar, brown sugar, cornstarch, and water. Stir well and set aside.

Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat.
