Ingredients

  • 200 g Rice vermicelli
  • 1 medium-sized, julienned Carrot
  • 150 g, thinly sliced Cabbage
  • 100 g, cut into 2-inch pieces Green beans
  • 3 cloves, minced Garlic
  • 3 tablespoons Soy sauce
  • 2 tablespoons Oyster mushroom sauce (vegetarian)
  • 1 teaspoon Sesame oil
  • 2 tablespoons Vegetable oil
  • 2 stalks, chopped Spring onions
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground white pepper
  • 1 small, sliced Chili (optional)

Directions

Step 1

Soak the rice vermicelli in warm water for 10 minutes or until softened. Drain well and set aside.

Step 2

Prepare the vegetables by julienning the carrot, thinly slicing the cabbage, cutting the green beans into 2-inch pieces, and chopping the spring onions. Mince the garlic and slice the chili if using.

Step 3

In a large wok or frying pan, heat the vegetable oil over medium heat.

Add the minced garlic and sliced chili (if using) to the pan and stir-fry for about 30 seconds until fragrant.

Step 5

Add the carrot, green beans, and cabbage to the pan. Stir-fry for 3–5 minutes until the vegetables are slightly softened but still crisp.

Push the vegetables to one side of the pan and add the drained rice vermicelli.

Sprinkle the chopped spring onions on top and give everything one final toss.

Transfer the stir-fried bihun to a serving dish and serve immediately.
