Ingredients

  • 4 large caps Portobello mushrooms
  • 3 tablespoons Soy sauce
  • 2 tablespoons Balsamic vinegar
  • 2 tablespoons Olive oil
  • 2 cloves, minced Garlic
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Black pepper
  • 4 Whole wheat wraps
  • 0.5 cup Hummus
  • 2 cups Baby spinach
  • 1 medium, thinly sliced Red bell pepper
  • 0.5 medium, thinly sliced Red onion
  • 1 cup, halved Cherry tomatoes
  • 0.5 cup, crumbled Feta cheese (optional)

Directions

Step 1

Clean the portobello mushrooms by gently wiping them with a damp paper towel and removing the stems.

Step 2

In a small bowl, whisk together soy sauce, balsamic vinegar, olive oil, minced garlic, smoked paprika, and black pepper.

Brush or spoon the marinade generously over both sides of the portobello mushroom caps. Let them marinate for 10-15 minutes.

Preheat a grill pan or skillet over medium heat. Once hot, place the marinated mushrooms on the pan and cook for 4-5 minutes per side, or until tender and lightly charred. Remove from heat and slice the mushrooms into strips.
