Ingredients

  • 4 pieces Portobello mushrooms (large, stems removed)
  • 3 tablespoons Soy sauce
  • 2 tablespoons Balsamic vinegar
  • 4 tablespoons Olive oil
  • 3 cloves Garlic (minced)
  • 1 tablespoon Brown sugar
  • 3 medium Yellow onions (thinly sliced)
  • 0.25 cup Vegetable broth
  • 1 teaspoon Fresh thyme (optional)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Clean the Portobello mushrooms by gently wiping them with a damp paper towel. Remove the stems and place the caps in a shallow dish, gill side up.

Step 2

In a small bowl, whisk together soy sauce, balsamic vinegar, 2 tablespoons of olive oil, and minced garlic. Pour the marinade over the mushrooms, ensuring they are evenly coated. Allow the mushrooms to marinate for at least 15 minutes while preparing the onions.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for 10 minutes or until softened.

Step 4

Sprinkle the onions with brown sugar and continue cooking for another 15 minutes, stirring frequently, until they are deeply caramelized. If the onions start to stick, add a splash of vegetable broth as needed.

Step 5

Once the onions are caramelized, season them with salt, black pepper, and thyme (if using). Remove them from the skillet and set aside.

Step 6

In the same skillet, add the marinated mushrooms, cooking each side over medium heat for about 4-5 minutes until they are tender and have a slightly charred appearance.

Step 7

Plate the cooked mushrooms and top each with a generous helping of caramelized onions. Serve warm.
