Ingredients

  • 2 cups Liquid egg whites
  • 0.5 cup Cottage cheese (low-fat or full-fat)
  • 0.5 cup Shredded Monterey Jack cheese
  • 0.25 cup Red bell pepper, finely diced
  • 0.5 cup Spinach, chopped
  • 2 stalks Green onions, finely sliced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 as needed Olive oil spray or nonstick cooking spray

Directions

Step 1

Preheat your oven to 325°F (160°C) and lightly grease a standard muffin tin with olive oil spray or nonstick cooking spray.

Step 2

In a high-speed blender, combine the liquid egg whites and cottage cheese. Blend until smooth and frothy, about 30 seconds.

Step 3
