Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
Once cooled, transfer the cooked spinach to a clean kitchen towel or paper towel. Squeeze out excess moisture to avoid soggy croissants.
In a mixing bowl, combine the spinach, feta cheese, cream cheese, salt, and black pepper. Mix until well combined.
Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 4 equal squares (you should have 8 pieces in total).
Place a generous spoonful of the spinach and feta filling in the center of each puff pastry square.
Fold each square diagonally to form a triangle, sealing the edges by pressing them together with a fork. Alternatively, roll them into croissant shapes.
If desired, beat the egg and lightly brush it over the tops of the croissants for a golden finish.
Carefully transfer the filled croissants to the prepared baking sheet, leaving space between them for expansion.
Bake in the preheated oven for 20-25 minutes or until the croissants are golden brown and puffed up.
Allow the croissants to cool for a few minutes before serving. Enjoy warm!
