Ingredients

  • 2 sheets Puff pastry sheets (vegetarian-friendly)
  • 4 cups Fresh spinach
  • 1 cup Feta cheese
  • 4 tablespoons Cream cheese
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive oil
  • 1 piece Egg (for egg wash, optional)
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

Step 3

Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.

Once cooled, transfer the cooked spinach to a clean kitchen towel or paper towel. Squeeze out excess moisture to avoid soggy croissants.

In a mixing bowl, combine the spinach, feta cheese, cream cheese, salt, and black pepper. Mix until well combined.

Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 4 equal squares (you should have 8 pieces in total).
