Ingredients

  • 12 oz plant-based ground pork substitute
  • 2 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 medium red bell pepper, sliced
  • 1 medium zucchini, sliced into half-moons
  • 3 stalks green onions, sliced
  • 3 tbsp soy sauce
  • 2 tbsp sambal oelek or chili garlic sauce
  • 1 tbsp hoisin sauce
  • 1 tsp cornstarch
  • 3 tbsp water
  • 0.5 tsp red chili flakes
  • 4 cups cooked rice or noodles (for serving)

Directions

Step 1

Heat a large non-stick skillet or wok over medium-high heat. Add 1 tablespoon of sesame oil.

Step 2

Once the oil is hot, add the plant-based ground pork substitute and cook until browned, about 5-7 minutes. Break it apart into crumbles as it cooks. Once done, transfer to a plate and set aside.

Step 3

In the same skillet, add the remaining tablespoon of sesame oil. Add minced garlic and ginger, and sauté for 1 minute until fragrant.

Step 4

Add the sliced red bell pepper and zucchini. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp.

Step 5

In a small bowl, whisk together soy sauce, sambal oelek, hoisin sauce, cornstarch, water, and red chili flakes, ensuring the cornstarch is fully dissolved.

Step 6

Return the cooked plant-based ground pork substitute to the skillet. Pour the sauce mixture over the ingredients and stir well to coat everything evenly.

Step 7

Continue cooking for 2-3 minutes, stirring frequently, until the sauce thickens and everything is heated through.
