Ingredients

  • 12 ounces spaghetti
  • 4 links plant-based sausage
  • 2 tablespoons olive oil
  • 3 cloves garlic cloves, minced
  • 1.5 cups cherry tomatoes, halved
  • 2 tablespoons tomato paste
  • 0.5 cups vegetable broth
  • 1 teaspoon dried oregano
  • 0.5 teaspoons red pepper flakes
  • 0.25 cups fresh basil leaves, chopped
  • 0.25 cups Parmesan cheese (optional, use vegetarian-friendly)
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Step 2

While the spaghetti cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Slice the plant-based sausage into rounds and saute them for 4-5 minutes, flipping occasionally, until browned. Remove from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Saute the minced garlic for 1 minute until fragrant, taking care not to burn.

Step 4

Add the halved cherry tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until the tomatoes begin to soften and release their juices.

Step 5

Stir in the tomato paste, vegetable broth, dried oregano, and red pepper flakes. Simmer the sauce for 5 minutes until slightly thickened.

Step 6

Return the browned plant-based sausage to the skillet and stir to combine. Season the sauce with salt and black pepper to taste.

Step 7

Add the cooked spaghetti to the skillet and toss to coat evenly in the sauce. If the sauce seems too thick, add the reserved pasta water a few tablespoons at a time until the desired consistency is reached.

Step 8

Sprinkle the chopped fresh basil over the pasta and gently toss to incorporate.

Step 9

Divide the spaghetti among serving plates and garnish with freshly grated Parmesan cheese if desired. Serve warm.
