Ingredients

  • 1 medium head Green cabbage
  • 1 large Yellow onion
  • 3 large Garlic cloves
  • 2 medium Carrots
  • 3 tablespoons Olive oil
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoons Cayenne pepper
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cups Vegetable broth
  • 1 tablespoon Apple cider vinegar
  • 2 tablespoons Chopped parsley

Directions

Step 1

Slice the cabbage into thin strips and set aside. Peel and finely slice the onion, mince the garlic, and thinly slice the carrots.

Step 2

Heat the olive oil in a large skillet or cast-iron pan over medium heat.

Step 3

Add the sliced onion and carrots to the skillet and sauté for 5 minutes, until the onion is soft and translucent.

Step 4

Stir in the minced garlic, smoked paprika, and cayenne pepper. Cook for another minute, stirring constantly, to toast the spices and release their aroma.

Step 5

Add the cabbage to the skillet, stirring to combine with the sautéed vegetables and seasonings.

Step 6

Sprinkle the salt and black pepper over the cabbage, then pour the vegetable broth into the skillet.

Step 7

Cover the skillet and let the cabbage steam for 5-7 minutes, stirring occasionally, until it begins to soften.

Step 8

Remove the lid and continue cooking for another 8-10 minutes, allowing the liquid to evaporate and the cabbage to caramelize slightly on the edges.

Step 9

Drizzle the apple cider vinegar over the cabbage and toss well to combine. Taste and adjust seasoning if necessary.

Step 10

Sprinkle with chopped parsley before serving. Serve hot as a side dish or pair it with cornbread for a full Southern-style meal.
