Ingredients

  • 150 grams shiitake mushrooms
  • 200 grams firm tofu
  • 1 medium carrot
  • 100 grams water chestnuts
  • 50 grams green peas
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon ginger
  • 1 clove garlic
  • 1 tablespoon cornstarch
  • 0.5 teaspoon white pepper
  • 30 pieces wonton wrappers
  • 2 tablespoons spring onions

Directions

Step 1

Begin by soaking the shiitake mushrooms in warm water for about 20 minutes or until they are soft. Once softened, squeeze out the excess water and finely chop them.

Step 2

Dice the firm tofu into small cubes and crumble them gently.

Step 3

Peel the carrot and finely grate it. Chop the water chestnuts into small pieces.

Step 4

In a large bowl, combine the chopped mushrooms, crumbled tofu, grated carrot, chopped water chestnuts, and green peas.

Step 5

Add soy sauce, sesame oil, grated ginger, minced garlic, cornstarch, and white pepper to the vegetable mixture. Stir well to combine all ingredients evenly.

Step 6

Lay a wonton wrapper flat on a clean surface. Place about 1 tablespoon of filling in the center of the wrapper.

Step 7

Gather the edges of the wrapper around the filling, leaving the top exposed, and gently squeeze to form a small cup shape. Repeat the process for all the dumplings.

Step 8

Prepare a steamer by bringing water to a boil in a pot and placing a steamer basket over it. Line the steamer basket with a piece of parchment paper.

Step 9

Arrange the Siu Mai in the steamer basket, leaving some space between each dumpling.

Step 10

Cover and steam the dumplings over medium-high heat for about 10-12 minutes or until the filling is cooked through.

Step 11

Once done, remove the dumplings from the steamer and garnish with chopped spring onions.

Step 12

Serve the Vegetarian Siu Mai hot with soy sauce or your favorite dipping sauce on the side.
