  • 8 pieces rice paper wrappers
  • 1 cup vegetarian shrimp
  • 100 grams vermicelli rice noodles

  • 1 medium cucumber, julienned
  • 1 medium red bell pepper, thinly sliced
  • 8 large lettuce leaves
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro leaves
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha sauce
  • 1 tablespoon lime juice
  • 2 tablespoons peanut butter
  • 2 tablespoons water
  • 1 teaspoon sugar
  • 2 tablespoons crushed peanuts

Directions

Step 1

Begin by preparing the vermicelli rice noodles according to the package instructions. Once cooked, drain and rinse under cold water to stop the cooking process, then set aside.

Step 2

Prepare the peanut dipping sauce by combining peanut butter, soy sauce, sriracha sauce, lime juice, water, and sugar in a small bowl. Mix until smooth and set aside.

Step 3

Lay out all the prepared ingredients on a clean surface: vegetarian shrimp, prepared noodles, carrot, cucumber, red bell pepper, lettuce, mint leaves, and cilantro.

Step 4

Fill a shallow dish with warm water and dip a rice paper wrapper in the water for about 10-15 seconds until it becomes pliable but not too soft. Remove and place it on a clean, damp kitchen towel.
