Ingredients

  • 4 pieces large portobello mushrooms
  • 1 piece red bell pepper
  • 1 medium zucchini
  • 1 medium red onion
  • 3 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon sea salt
  • 10 pieces cherry tomatoes
  • 8 pieces bamboo or metal skewers

Directions

Step 1

If using bamboo skewers, soak them in water for at least 15 minutes to prevent burning during grilling.

Step 2

Clean the portobello mushrooms with a damp cloth and cut them into large cubes, around 1.5 inches.

Step 3

Cut the red bell pepper, zucchini, and red onion into similar-sized pieces, approximately 1.5 inches each.

Step 4

In a large bowl, combine olive oil, soy sauce, lemon juice, smoked paprika, ground cumin, garlic powder, black pepper, and sea salt. Mix well to create the marinade.

Step 5

Add the mushrooms, red bell pepper, zucchini, red onion, and cherry tomatoes to the marinade, tossing gently to coat all the vegetables evenly.

Step 6

Cover the bowl with plastic wrap and let the vegetables marinate for at least 20 minutes at room temperature, or up to 2 hours in the refrigerator for enhanced flavor.

Step 7

Preheat a grill or grill pan to medium-high heat.

Step 8

Thread the marinated vegetables onto the skewers, alternating types as you go to distribute them evenly.

Step 9

Place the skewers on the preheated grill, cooking for about 10-15 minutes, turning occasionally to ensure even cooking. The vegetables should be tender and slightly charred.

Step 10

Serve the vegetarian shashlik style kebabs immediately, garnished with lemon wedges or fresh herbs if desired.
