Ingredients

  • 2 cups Boiled and mashed potatoes
  • 1 cup Grated carrots
  • 1 cup Finely chopped capsicum
  • 1 cup Grated paneer
  • 0.5 cup Bread crumbs
  • 2 tablespoons Finely chopped green chilies
  • 0.5 cup Chopped fresh coriander leaves
  • 1 teaspoon Ginger paste
  • 1 teaspoon Garlic paste
  • 1 teaspoon Garam masala
  • 1 teaspoon Cumin powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 1 tablespoon Lemon juice
  • 3 tablespoons Oil (for shallow frying)
  • 0.25 cup Water
  • 10 Bamboo skewers

Directions

Step 1

Soak the bamboo skewers in water for 20 minutes before starting, to prevent them from burning during cooking.

Step 2

In a large mixing bowl, combine boiled and mashed potatoes, grated carrots, chopped capsicum, and grated paneer.

Step 3

Add the bread crumbs to the bowl and mix thoroughly to help bind the mixture.

Step 4

Gently stir in chopped green chilies, coriander leaves, ginger paste, garlic paste, garam masala, cumin powder, red chili powder, and salt.

Step 5

Add lemon juice to the mixture and check for seasoning. Adjust spices and salt if needed.

Step 6

Take a small portion of the mixture and flatten it into a cylindrical shape around a bamboo skewer, pressing gently to ensure it sticks well.

Step 7

Repeat the process for the remaining mixture and skewers.

Step 8

Heat oil in a non-stick pan over medium heat.

Step 9

Shallow fry the kebabs on all sides until they are golden brown and crisp. This should take about 8-10 minutes per batch.

Step 10

Once cooked, remove the kebabs from the pan and drain excess oil on paper towels.

Step 11

Serve hot with mint chutney or a yogurt sauce of your choice.
