  • 4 large eggs

  • 2 stalks green onions

Directions

Step 1

Wash the bitter melon thoroughly under running water. Slice the bitter melon in half lengthwise and use a spoon to scoop out the seeds and white pith. Slice the flesh thinly into half-moon shapes.

Sprinkle the sliced bitter melon with a little salt and let it sit for about 10 minutes to reduce the bitterness. After 10 minutes, rinse the bitter melon slices under water and pat dry with paper towels.

Crack the eggs into a bowl, add soy sauce, ground black pepper, and a pinch of salt. Whisk together until the mixture is smooth and well combined.
